According to a recent study, if red quinoa drink is fermented with bacteria L. plantarum and B. longum, it can be even used as probiotics to restore the gut microbiota during and after treatment with certain antibiotics.

In the study different red quinoa drinks were fermented with L. plantarum and B. longum bacteria at different times. The results showed that already after 6 hours of fermentation not only the microbial concentration in drinks was high, but also probiotic bacteria survival was very high even after reaching the gut.

There was also a noticable difference between the fermented drinks. In drinks with B. longum bacteria the best probiotic concentration was reached at 24 hours. On the other hand, drinks fermented with L. plantarum bacteria had the highest levels of total polyphenols and antioxidant capacity after reaching the gut.
